overnight celeb

i wanted to hate overnight oats. like really wanted to hate them.

soooo IG fitspo and blog girl.

and delicious.

and easy/convenient.

now i make overnight (or few hours) oats at least a few times a week.

my recipe is super simple:

  • 1 cup oats (organic old-fashioned are my fave)
  • 1 tablespoon chia seeds (costco for great value)
  • generous shakes of cinnamon
  • enough soymilk to totally immerse mixture

i give that a thorough stir so that the chia seeds aren’t a gelatinous mess and refrigerate.

when i’m ready to eat, i top with shredded unsweetened coconut and pumpkin seeds or slivered almonds.

treat yoself on the toppings but be aware of too much added fat and sugar.

life lesson: don’t judge all trendy foods in mason jars the same.
