y’all, i have been a tomato girl for decades!
i basically grew up on sliced romas as a dinner side, could drink marinara sauce with a straw and will find any excuse to add a quick bursting cherry tomato to a dish. don’t even get me started on the tomato red l.l. bean backpack + old navy puffer in middle school.
in a 2023 ode to il pomodoro, i have been taking down some tomato sandwiches! it is simultaneously rustic and oh-so southern and uniquely summer. and perhaps, those are the only adj. i will adhere to for the foreseeable future!
my recipe:
- one gorgeous beefsteak or heirloom tomato
- one slather of duke’s mayonnaise (duke’s only!)
- fun bread, meaning good bread, meaning get it from the bakery bread!
- penzey’s sandwich sprinkle
- kerrygold butter
toast two slices of from the bakery bread that are edge-to-edge in butter.
when done, add a healthy portion of mayo (trust me!) and a shake of sandwich sprinkle.
thicc slices of tomato are the only option, followed by an additional duke’s slather.
pair with a glass of white wine, a pool dip & crunchy chips for a summer to cherish.
